Eat, Live, Run blog but substituted with raisins instead of cranberries, and the addition of some protein powder ( I used the Aria brand), you can have a yummy and healthy treat that I figure would be perfect for a breakfast on the run, also.
makes about 3 dozen cookies
1 3/4 cup old fashioned oats
3/4 cup all purpose flour
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1 1/2 teaspoon protein powder (Aria)
1/2 cup packed brown sugar
1 stick butter, softened
2 tsp vanilla extract
1/3 cup toasted chopped walnuts
1/2 cup chocolate chips
1/3 cup raisins
Preheat the oven to 375.
In a medium sized bowl, stir together the oats, flour, salt, baking soda, cinnamon, walnuts, raisins, protein powder, and chocolate chips. Set aside.
Cream together the brown sugar and butter until light and fluffy. Add the egg and vanilla and continue to beat until smooth. Add the dry ingredients and beat only until combined.
Scoop out large teaspoons of dough on a lined baking sheet. Bake for 10 minutes, or until golden brown.
